No one had ever believed they could cultivate vineyards right in Pazzano, in the heart of Frignano Basso, and be able to produce wines that have unique characteristics.

"CANTINA DEL FRIGNANO"

Small organic winery aimed at high quality

Our vineyards located in Frignano Basso, are located from 450 to 550 meters above sea level. The thermal excursions enhance the peculiarity of the territory. The soils are composed largely of clay, silt, sand, in balanced quantities, chalky, particularly suitable for classic method sparkling wine grapes and in other part in clayey soils suitable for red berried grapes. The vines per hectare are about 4000. The harvest is manual.

The yield is 50/60 quintals per hectare. Thus began in 1993 with a first experimental vineyard of the Emilia Romagna Region and subsequently in 2000 and 2001 other vineyards will be planted. Today the company is spread over an area of ​​just over 5 hectares, all planted with vineyards and the annual production is around 22,000 bottles.

Given the microclimate and the altitude (450-550 meters above sea level), medium-early varieties and native grapes such as Malbo Gentile, Uva Tosca and Uva Lambrusca (Grasparossa) have been planted, but the best products are those that exploit the territory where they live and all its properties, in the rest planted with Chardonnay, Pinot Nero, Merlot, Cabernet and Trebbiano

The territory of Frignano occupies the central part of the Modenese Apennines of Gallo-Celtic origin. It was in fact the Friniati, Ligurian-Provencal peoples who lived there for centuries. There are numerous testimonies in culture and gastronomy. Known are the crescentine and borlenghi.

During the Este period the capital, Pavullo, dominated by the Montecuccoli Counts, was also the seat of the summer residence of the Dukes of Modena and the hilly areas were intensely cultivated with vines. The economic importance of the vine in the Frignano area had an importance far greater than that of the chestnut, in fact the production was, as Sorbelli affirms, profitable and abundant, so much so that many statutes, such as the Frignanese one in 1337 obliged every family to farmers to plant a certain amount of land every year.

In Frignano we find Lambrusca, Trebbiana, Uva d'oro, Barbera, Covra, but by far the most cultivated was Uva Tosca, enough to justify a factory of black wine bottles in Pavullo.
